Ingredients

  • 1 SOLE, 400-500 G EACH
  • 4 LARGE POTATOES
  • 2 RED ONIONS
  • 1 BAG LAMB’S LETTUCE
  • 1 EGG WHITE
  • 50 G FRIED SWEET CORN
  • 50 G SHELLED WALNUTS
  • 50 G SHELLED PISTACHIO
  • EXTRA VIRGIN OLIVE OIL
  • BLACK PEPPER
  • SALT

Preparation

    THE POTATOES

    Peel the potatoes and slice into thin rounds. Slice the onions very finely and mix with the potatoes. Season and place on an oven tray. Drizzle with oil and a few drops of water in cook in the oven for 45 minutes at 180⁰C.

    THE COATING

    Crush the sweetcorn and nuts to produce a coarse meal, with identifiable pieces in it.

    THE FISH

    Remove the fillets from the spine, dry with kitchen roll and coat with beaten egg white and coat with the nut mixture. Then fry them in a frying pan with lots of oil and allow to drain on kitchen roll.

    PLATING AND PRESENTATION

    In the middle of plate put a small pile of potato. Place a small handful of lamb’s lettuce dressed with oil next to the potatoes. Place the fillets of sole upright on the potatoes, using them for support. Sprinkle with the nut mixture and decorate with a few leaves of lamb's lettuce.
